This sifted flour features our estate Oberkulmer spelt that is sifted through screens providing a silky texture by removing some of the bran from the flour. Sifted flour will provide a lighter mix and is great for pastry and lighter dough recipes.  Oberkulmer Spelt is known as the “pure spelt” originating from Switzerland and has no wheat germplasm in its parentage.  It is one of the ancient varietals of hulled grains and has higher protein percentage but lower gluten content than red or white wheat.  The Tasting profile notes of a buttery and nutty flavor.
